Q: How does your menu development process work?

A: For existing restaurants looking for an outstanding new menu, our menu development process follows a four-step process:

  • Development of menu structure and items for review with you
  • Once menu items have been finalized (in principle), develop recipes and costings
  • Tasting session (or two or three depending on the size of the menu) for all new menu items either onsite or in our test kitchen
  • Recipe, item and cost adjustments based on the tasting and finalized menu
  • Our Chefs can then be onsite to assist with the Staff Training and launch of the new menu.

Q: Do provide training on the new menu for staff?

A: Training is a key party of our menu development and handoff process. Our Chefs will carry out onsite training of the new menu, structure, recipes, prep and more with your team to ensure ease of execution and that everyone is on the same page.

Q: Do you offer menu development as part of a larger package for restaurants?

A: While we offer menu development as a standalone service, we also build it into our Opening Handholding Package for New Openings. It is also built into our Fifteen Week Fix overhaul program

Q: How does menu development differ from menu engineering?

A: Our menu development services involve the creation of an entirely new, unique menu for a restaurant launch, or the overhaul and improvement of an existing one for an established concept. We ensure that you have a standout list of offerings that not only taste great and make sense operationally but seamlessly align with your brand and larger concept.

Menu engineering is a secondary process involving a strategic review of your menu to identify items that are popular and profitable. We work with you to help make the most of your offerings and capitalize on incremental revenues.

Q: How much of an impact will strategic menu development have on my bottom line/profitability?

A: The exact benefit is difficult to estimate but if your menu isn't the best that it can be, it will definitely substantially impact your bottom line. Keep in mind, that #1, revenues are the most important factor in your profitability and #2, your menu is one of the most important aspects of why people visit you and return again and again.
